Vegan Pumpkin Soup

A simple and healthy comfort food. Perfect for the rainy days.
Ingredients
1 kg pumpkin
2 tbsp oil
salt & pepper
1 onion
3 cloves garlic
1 tbsp ground coriander seeds
500ml vegetable stock (or water for quick and easy)
Garnish :
Coconut cream
Paprika powder
Parsley
Direction
Clean and cut the pumpkin into smaller pieces.
Heat some oil on a pot and saute some garlic and onion.
Put in some salt and coriander seeds.
Put the pumpkin in and stir it for a while.
Pour the vegetable broth/water in and let it boil until the pumpkin is soft.
Let it cool.
Put the soup into a blender or food processor and blend it until it's smooth.
Serve with coconut cream, paprika powder, and parsley as garnish.
Serves
As it is or with toasted bread.
Chef's Tip
Make sure to use a dark orange colored pumpkin, cause they will taste better!
