Nasi uduk is one of numerous Indonesian rice-based dishes. The rice in nasi uduk is cooked in coconut milk together with lemongrass, cloves, pandan leaves, and sometimes cinnamon. It is a dish rarely eaten on its own, but rather served with a variety of side dishes and condiments, such as meat, rice noodles, eggs, tempeh or tofu.
Ingredients
FOR RICE:
450 gr Rice
450 ml Water
1 pc Smashed lemon grass
4 cm Smashed ginger
4 cm Smashed galangal
2 pcs Bay leaf
1 pc Pandan leave
3 pcs Torned lime leaves
65 ml Coconut milk
10 gr Salt
FOR CHICKEN:
1 kg Chicken (4 parts)
Seasonings 1:
4 cm Tumeric
4 cm Ginger
4 cm Galangal
5 pcs Onions
5 pcs Garlic
3 pcs Candle nut
1 tsp Pepper
1 tsp Coriander
1 pc Smashed lemon grass
2 pcs Bay leaf
5 pcs Lime leaves
Salt by taste

Serve fresh on a plate with spicy sauce (optional) and some vegetable.
Chef's Tip
Before every order, we would boil large amounts of chicken in one pot and store it in the chiller after. Once there is an order, we would either fry it or grill it depending on the customer's and guest's preference.
