Chicken Burger Sambal Matah

A crispy chicken burger with a touch of Balinese spices.
Ingredients
Sambal Matah:
1 shallot
1 inch of lemongrass
1 tbsp coconut oil
1 lime leaf
1 or 2 bird's eye chili
a tip of tsp prawn paste (terasi)
a little bit of sugar & salt (optional)
The Burger:
1 burger bun
100gr chiken breast
2 tbsp double dip flour
a pinch of garlic porder
a pinch of salt & pepper
3 slice of tomato
lettuce
110gr of fries
Direction
Sambal Matah:
Slice the shallot, lemongrass, and chili.
Cut and throw away the middle part of the lime leaf, and slice the rest.
Heat the coconut oil on the pan and put in the prawn paste.
Put together all ingredients in a bowl, add salt and sugar, and mix it well.
Make the burger:
Pound the chicken.
Mix the flour with salt, pepper, and garlic powder. Then make a wet mixture and a dry one.
Dip the chicken into the wet mixture, and then to the dry one.
Fried the chicken until it's golden.
Make your burger with the chicken, tomato, letuce, and drench the Sambal Matah on top of your chicken.
Fry your fries and drizzle it with salt.
Serves
Together with fries and simple salad.
Chef's Tip
You don't need to stir the prawn paste, the heat of the oil will dissolve it. If the flavor is strong enough, you can just use the oil, and throw the block of prawn paste away.
