Octopus

Culinary dish for people who love seafood. Cooking octopus can be tricky, but when done right, it’s tender, delicious and loaded with health benefits.

Ingredients

This Recipe Serves 4

1/2 kg Octopus

2 Large potatoes  

400 gr Frial Smoked Bacon, thin sliced

50 gr Grated Idiazábal (smoked cheese)

Butter

FOR THE OCTOPUS:

  • Scare the octopus 3 times in water, taking it out and putting it in (so that it does not peel). 
  • Remove half the water (keep about 4 glasses) and drop it into the water. 
  • Close the lid and cook 15-18 minutes after it begins to boil. 
  • Put the chopped chives in a sauté together with 3 tablespoons of oil and the salt.
  •  

    FOR THE BACON & POTATOE TERRINE:

  • To start, Peel and chop the potatoes, cutting them with a mandolin or a potato peeler to make them very thin.  Wash them, drain them and reserve them.
  • Preheat the oven to 150 degrees. Then, grease the mold with butter and cover the bottom with slices of Frial Smoked Bacon mounted slightly one on top of the other.
  • Arrange them from the center of the mold, leaving the ends outside to be able to close the cake with them later.
  • Introduce two layers of slices of the potatoes already cut very thinly in the bottom. Top with a thin layer of grated cheese.
  • Cover with a layer of bacon slices. Repeat the operation again placing two layers of potato, one of cheese and one of bacon until we finish with all the ingredients, finishing with a double layer of potatoes. Depending on the size of the pan, you may need more potatoes or more bacon, so you will have them on hand just in case.  
  • Next, line the mold with aluminum foil to the bottom so that it does not lose steam and bake at 150 degrees for approximately four hours.  Check if the cake is made by pricking it with a needle or a knife.  If the potato offers no resistance, it is done. 
  • Remove the mold from the oven, let it rest and when it is warm we put it to cool in the fridge for a minimum of 6 hours. After this time, remove the terrine from the refrigerator, pass a sharp knife around the edge and unmold it on a tray.  
  • Serves

  • To serve, the ideal is to cut the cake into thick slices, mark them in a hot pan or griddle without fat for a couple of minutes on each side so that they acquire a golden hue. And enjoy it!  
  • You can use this cake as a garnish for grilled or roasted meats or as a main dish accompanied with a green salad.  You can also serve it as an appetizer, cutting it into cubes instead of slices and presenting them pricked with a toothpick.
  • Chef's Tip

  • Chose a big octopus that has a better quality. And chose a good quality of the smoked cheese.
  • Do not use any salt when cooking. Use always only smoked cheese.
