Grilled Veggie Sandwich

In an effort to eat less meat, I decided to eat vegetarian 3 days out of the week. And with that, the Grilled Veggie Sandwich was born.

Ingredients

This Recipe Serves 1

2 slice Sourdough

1/4 Zucchini - cut into 1 cm slices

1/4 Eggplant - cut into 1 cm slices

1/2 Tomato - cut into wedges

1/4 Bell Pepper - cut into 1 cm slices

35 gr Spinach

100 gr Cauliflower - split

1 Avocado - smashed

4 Button Mushroom - cut into 1 cm slices

1/2 tsp Salt

1/2 tsp Fresh - ground black pepper

1 tbs olive oil

Direction

  • Light the grill.
  • Add Zucchini, Eggplant, Tomatoes, Bell pepper, Cauliflower in a large bowl combine with Salt, Black pepper, and oil.
  • Grill the vegetables in a batches, turning once, until lightly browned and tender, 2 until 3 minutes per batch.
  • Sauteed the mushrooms and spinach.
  • Toast the Sourdough, spread the Smashed avocado on 1 Sourdough and put saute mushrooms and spinach.
  • Sandwich the grilled vegetables and close with the sourdough.
  • Serves

    On a big plate with pesto dressing.

    Chef's Tip

    If you like the combination of sweet and salty, you can spread a little bit of honey and maple sirup.
